Hearty Chickpea Stew
A flavorful and nourishing chickpea stew, perfect for cozy nights! Serve with a slice of baguette and an optional dollop of sour cream for extra richness.

Ingredients
- 2 tablespoons olive oil
- 12 pear onions peeled and halved
- 3 garlic cloves minced
- 2 tablespoons oregano
- 2 bay leaves
- 2 teaspoons rosemary
- ½ teaspoon salt
- 2 16 oz cans chickpeas, drained and rinsed
- 1 1 oz can fire-roasted tomatoes
- 3 cups vegetable stock
- Juice of 2 fresh lemons
Instructions
- Heat the Dutch oven over medium-high heat.
- Add olive oil and let it warm up.
- Sauté the onions for 1 minute until slightly softened.
- Add minced garlic and sauté for 30 seconds until fragrant.
- Mix in oregano, bay leaves, and rosemary with the onions and garlic.
- Sprinkle salt and let the seasonings become fragrant for about 1 minute.
- Add the chickpeas, stirring to coat them in the seasonings.
- Pour in the vegetable stock and add the fire-roasted tomatoes.
- Stir everything thoroughly to combine all ingredients.
- Cover with a lid and let the stew simmer for 20 minutes.
- Squeeze in fresh lemon juice and stir to mix evenly.
- Let cool slightly before serving.
- Enjoy with a sliced baguette!
